# Pajdeg?

Nån som har ett bra recept på pajdeg?  
Det finns ju smulpaj som man bara strör över frukterna/fyllningen. Men jag menar sån som man gör som botten..å kanske som toppen ozå, se bild. I use to make a 'pajdeg' this way to a 30 cm form:

200 g of butter (always with salt), some salt or sugar (according to your taste and the pie you want to make, if it's sweet or salty) mixed with white flour until it's not glueing in hands anymore(leaving the hands easily) but not dried - mix 2 tea cups of flour and continue mixing more little by little.

Open the 'pajdeg' and cover a form already prepared with butter and flour spreaded all around.

Pick the 'paydeg' with a fork in diferent places.

Mix one yolk of an egg with one table spoon of water until is clear.

'Paint' all around the 'pajdeg' with this mix of yolk and water.

Put the filling you want, ornate with the left pieces of the 'pajdeg', 'paint' with the mix of yolk and water.

Bake it in warm oven at 200\* for +- 50 minutes until the surface is tunned.

This 'pajdeg' becomes like 'sand' melting when you eat, very tasty, but also a bit hard to cut without making a mess.

If you want to make it easier to cut, you can put 2 yolk of eggs in the mix, but you loose the tasty feeling of melting.

I use this 'deg' also to make small sweet cookies, cutting small thin pieces, baking them without they becoming tunned (+- 20/30 minutes), let them get completely cold and glue two pieces with marmelade of some fruit, then rolling them in sugar.

Also, you can make small salty pies using small metal forms like a normal big pie.
